Bruschetta Chicken Tortellini Pasta Salad

Tender cheese-filled tortellini, juicy tomatoes, and savory chicken tossed in a light balsamic dressing make this the perfect lunch, light dinner, or potluck favorite.
Ingredients:
20 oz fresh spinach & cheese tortellini (or frozen, thawed)
6.5 oz grape tomatoes, sliced
1½ to 2 cups cooked chicken breast, cubed or shredded (grilled or rotisserie works well)
2 garlic cloves, minced
8 fresh basil leaves, sliced or torn
1 tbsp extra virgin olive oil
1 tsp balsamic vinegar
¼ tsp kosher salt
Cracked black pepper, to taste
1–2 tbsp balsamic glaze or reduction (optional, for drizzling)
👩🍳 Directions:
1. Cook the Tortellini
Bring a large pot of salted water to a boil. Cook tortellini according to package instructions until al dente.
Drain and rinse with cold water to stop cooking. Set aside.
2. Combine the Salad
In a large mixing bowl, toss together the cooked tortellini, sliced grape tomatoes, chicken, garlic, and fresh basil.
3. Make the Dressing
In a small bowl, whisk together olive oil, balsamic vinegar, kosher salt, and black pepper. Taste and adjust seasoning as needed.
4. Toss & Coat
Pour the dressing over the salad mixture and gently toss to coat everything evenly.
5. Finish & Serve
Serve immediately or chill until ready. For an extra burst of flavor, drizzle with balsamic glaze before serving.
